SAN FRANCISCO -- Among the few dot-com survivors, Keen Inc. is a standout. It runs a Web site listing thousands of people who give paid advice, over the phone, to people who click on their names. Portraying itself as a marketplace of advisers on a wide range of mainstream topics, Keen boasts heady sales growth, blue-chip backers and plenty of cash.

But Keen doesn't boast about one secret to its success: customers such as Dawn Simpson, a San Antonio legal administrator who went to the site not for advice on taxes or gardening or law, but to divine her future.

When her life hit bottom after her live-in boyfriend left and she miscarried their child, Ms. Simpson spent hours on the telephone talking to psychics listed on Keen's Web site. They kept predicting her guy would come back. But the only thing that came to Ms. Simpson was $3,000 in credit-card bills for the calls.

The psychics "knew what I wanted to hear," Ms. Simpson says. "I even told them I don't have this money, and they'd say, `Don't you want happiness in your life?' "

Keen -- with pedigreed investors such as Benchmark Capital and Microsoft, glowing press clippings and vocal fans on Wall Street -- is among the last remaining hot Internet start-ups. "This is one of the few that will emerge from the rubble as a legitimate and successful business," says Andrea Rice of Deutsche Banc Alex. Brown, which invested in the firm. At least until recently, Keen was calling itself the fastest-growing e-commerce business in U.S. history.

Keen says its membership ranks have swelled to more than 3.5 million from two million in mid-February. While Keen doesn't disclose revenue, executives have said they expect the company to be profitable by early next year, and they have plenty of cash to get them there. Keen has its sights set on an initial public offering.

"To find sound advice and reliable information, consumers want to speak to someone they trust," explains the corporate-background page on Keen's Web site. It describes Keen as a "resource for connecting people who want to give or receive live, immediate advice on everything from computer help to dieting, tax questions to personal issues, romance to nutrition."

But Keen's recipe for success may be much simpler, offering a revealing clue to what it really takes to succeed on the Internet. ComScore Networks Inc., which tracks online consumer behavior, says 89% of calls made to Keen's advisers in December and January were to psychics, and 6% were to categories that include sexual come-ons. NetRatings Inc., another research outfit, says Keen's household demographics and advertising patterns veer toward lower-income consumers. "Based on what they're saying to people, I would have assumed their customers are clicking on areas like how to repair a wallet or grill a salmon," says Sean Kaldor, a NetRatings executive. "That isn't where things are going."

Last year Keen acquired 800predict, a Web site for psychics, and began listing them on its own site. It didn't announce the acquisition. Keen says it was too insignificant to publicize.

Also last year, Keen hired a provider of adult Web sites called Teleteria Inc. Keen was "very clear they didn't want any press about the phone-sex portion of their business," says Teleteria's president, Jay Servidio.

Keen's chief executive, Karl Jacob, denies that the company focuses on psychics or sex, or that it has tried to mask its sources of revenue. He says ComScore's numbers aren't accurate. Keen, he says, is focused on industries such as information services, consulting and financial planning.

Keen's roots go back to March of 1999, when a young Yale graduate named Scott Faber watched his New York taxi driver chat on his cellphone and had a bright idea: He could create an eBay for human capital, he thought, where the buyers and sellers could use the phone to trade information.

By August, Mr. Faber was in California talking to Benchmark, the firm that made its name by backing eBay. Benchmark took the idea from there, in classic Silicon Valley start-up style: putting in some money, tapping its network of technology investors, lining up board members and getting the story out to the news media.

The first step was to link Mr. Faber with Mr. Jacob, a Benchmark "entrepreneur-in-residence" looking for his next project. A former executive of Microsoft Corp. who had sold it his software start-up, Mr. Jacob was a quintessential Silicon Valley fast-tracker, driving a Dodge Viper and racing sailboats. By November 1999, its Web site was up. Just a few weeks later, Keen announced that it had raised $60 million.

The site listed self-registered experts known as "KeenSpeakers," usually under pseudonyms, and showed a per-minute charge for talking to each. A customer who wanted some advice would register with Keen, then click on a speaker. Keen's technology would connect them by telephone -- leaving both sides anonymous -- and start charging the caller's account, with Keen taking 30% of the fee.

Keen's executives and Benchmark decided to let advice-givers list themselves freely. "We wanted to position ourselves to be open to anything and anyone," like eBay Inc., says Dustin Sellers, Keen's head of customer acquisition. Big names invested, including eBay, Paul Allen's Vulcan Ventures, Inktomi Corp., Integral Capital Partners and Cnet Networks Inc.

At first, Keen targeted Web-savvy young people, advertising on "Friends" and "The X-Files." Mr. Jacob tapped his media contacts, talking in interviews about the doctors and software engineers who offered advice via Keen. National publications and shows including Fortune, BusinessWeek, CNBC and The Wall Street Journal picked up the theme, calling Keen a "cool company," an "up-and-comer" or "one to watch."

"Keen has been pretty consistent in presenting the image of kind of a homogeneous platform for this exchange of information, and I guess the media has listened to that message," says Jeff Skoll, a Keen board member and eBay co-founder.

But employees found it wasn't easy to get people to pay for travel, business or career advice from anonymous strangers. "The early adopters were usually people who already had experience talking to people on the phone and looking for advice, like astrology and psychics," says a former Keen marketing employee. "The problem is getting [other] people to really see the value."

When funding for consumer Web sites started growing scarce about a year ago, former Keen employees say, Keen went after "the low-hanging fruit." It acquired 800predict in June 2000, adding its psychics to the Keen stable.

Neither Keen's Web site nor 800predict's site mentions the acquisition. Some former Keen employees say top executives told them that if they were asked about 800predict, they should describe the relationship as a partnership, not an acquisition. Mr. Jacob denies that and says Keen didn't hide the purchase.

In the summer of 2000, Keen sent potential investors projections of revenue growth. "We set numbers out there and beat them, every time," Mr. Jacob says. In October, as some dot-coms were folding, Keen raised $42 million from investors to push its total above $100 million.

Some former employees say Keen turned its own workers into a captive market, frequently asking them to call certain parts of its own site. For instance, one KeenSpeaker offered callers taped instructions on how to make squirrel pie, a piece of advice that ended up in a Fortune magazine article about Keen. The Web site shows that 15 callers have offered an evaluation of that advice-giver under the site's feedback system. But former workers say that at least eight of the 15 were actually Keen employees, their screen names show. One was Mr. Sellers. Another, they say, was Mr. Jacob.

Keen's eighth-highest-ranked expert in the travel and recreation category is "Dusty Road." But Dusty Road is a screen name of Keen's Mr. Sellers. Of the nine pieces of feedback Dusty Road has received, former employees say two are from Mr. Jacob, one is from a brother of the CEO and one is from "kellynice," the name of Keen's advertising agency. Citing its privacy policy, Keen declined to verify the identities of the postings.

Mr. Jacob says staff calls to the squirrel-pie KeenSpeaker merely reflect curiosity. He doesn't think evaluations by anonymous Keen employees are misleading, asking, "Is their feedback any less valid than yours?" And they couldn't skew the site's overall numbers, he says, because the staff numbers only about 150. Some ex-employees say that while they were asked to make calls in part to check on speaker quality, they suspect it was also to prevent rarely called speakers from dropping out.

Speaker listings show that the top five psychics on the Web site have drawn 15 times as many calls as the top five computer experts. Mr. Skoll, the director, says that "certainly more than half" of Keen's business is "in romance and astrology."

Keen is talking about expanding its ties to Linda Georgian, a KeenSpeaker who was co-host with Dionne Warwick of a Psychic Friends Network infomercial once common on cable TV. "They'd be my [public-relations] representative and book me on shows" such as Howard Stern, Ricki Lake and Jerry Springer, Ms. Georgian says. Keen says it offers such support to any KeenSpeaker.

Mr. Jacob was asked about psychics in February, and said that Keen was just as strong in the health, computers and business categories as in psychics. Asked again last month, he said the company didn't wish to reveal its business breakdown.

He did identify categories in which revenue is growing fastest. They are money and career, business, and health and therapy, he said. He noted that "calls aren't the same thing as revenue."

Ms. Simpson's calls represented revenue. Recalling the events of late last year -- her boyfriend's departure and her miscarriage -- the San Antonio woman says she was "losing my mind, losing my hair. I started drinking all the time." She began calling Keen's psychics repeatedly, at prices sometimes above $4 a minute.

"They kept telling me that `he loves you, loves you so much, he'll come back to you,' " she recalls. "It was like an addiction, filling my head with all this stuff." One psychic, she says, insisted she stay on the line for an hour while the psychic burned a candle. It cost her $350.

Finally, one psychic e-mailed her, suggesting she stop wasting her money and get on with her life. She says she complained to Keen about all the bad advice from psychics and the money it cost her, and Keen knocked a couple of hundred dollars off her bill. "They told me I knew what I was getting into, that this is just for amusement," she says.

Some KeenSpeakers fret about vulnerable customers. "I see so many people call with the last penny in their hand, people who spend their grocery money, their mortgage money, calling a psychic," says "bimmyj," a former food-service manager who offers counseling on Keen. Most KeenSpeakers don't want the public to know their real names.

"DeepWater," a psychic, says some callers are struggling with loneliness, abuse, poverty or depression. "I see people come in with serious problems and lose thousands -- I mean thousands -- of dollars," he says, asking not to be identified because of his day job in financial services.

Gail Summer, president of the American Association of Professional Psychics, says she rejected a request by Keen to encourage its members to become KeenSpeakers. She says the problems starting to bedevil the Web site are "just a mirror of what happened in the 900 [phone] industry. First it was a core group of psychics who were very responsible and truly believed they were serving. Then the big marketing companies got involved in the game, and they didn't care who answered the phone as long the caller was on the line long enough."

Mr. Jacob denies that Keen has such problems. He says he isn't familiar with Ms. Simpson's case. He says Keen's system of letting callers rate speakers should flush out any problems.

Keen recently advertised in supermarket tabloids, highlighting a new toll-free telephone number. It gives Keen access to people who don't have Internet access. "Love him or leave him?" reads a large color ad in Star magazine. "Is he the one? Talk to someone who knows! Keen has the largest selection of the world's best psychics, tarot readers and spiritual advisers."

Most of Keen's online advertising promotes psychic readings and runs on sites targeting women, according to a partnership between NetRatings, Nielsen Media Research and ACNielsen.

Nielsen//NetRatings says Keen users are more likely to have incomes below $25,000, to have just a grammar-school education, and to be African-American than are visitors to the average Web site. KeenSpeakers say the site attracts a significant number of black women, a traditionally big segment of the psychic-call market. "They're definitely focused on relationships and psychics," says NetRatings' Mr. Kaldor.

Mr. Jacob says Keen doesn't target African-Americans, lower-income people or the less-educated. In fact, its customers are more likely to have graduated from high school or college than the general population, he says. Advertising in the tabloids is just a "small part" of Keen's promotion, he adds.

As for sex calls, ComScore, which confidentially monitors the Internet behavior of more than 1.5 million volunteers, found such traffic not just in Keen's restricted "adults only" area but also in its "romance and social" category. That category's top-rated speaker until recent days was "Liz69," who calls herself an "Experienced, Gorgeous, Sexy Female!" A woman named Amanda Lewis, who was listed until recently in the romance and social category as "ahotsexychick," said she offered phone sex and had received thousands of calls.

Some Keen employees say they were surprised to be presented with a contract that read in part: "I understand and agree that my job responsibilities at Keen.com may require me to access, review, and/or monitor material that is sexually explicit or of a sexual nature (`Adult Only Material')."

In a February interview, Mr. Jacob said Keen had never been much interested in the sex category. "We have a community, and that isn't the way we want to make our money," he said.

Jay Servidio of Teleteria, the adult-Web-site provider, says Keen executives approached him last year and "said they wanted to be connected with someone who knows the [900-number] business, who knows everybody, and who wouldn't get them in any lawsuits." He says that he "brought the biggest players from the phone-sex industry in the world to Keen."

He cites Videosecrets, a big provider of live adult entertainment to the Web. Online customers already could watch and chat with its models. Now they can also talk to them on the phone using Keen's technology. The Keen site shows Videosecrets has received 7,400 calls over the past year.

Mr. Jacob says adult content provides less than 5% of Keen's revenue. He says the point of Keen's relationship with Jay Servidio was simply "to understand the adult industry and policies to determine how to deal with adult on Keen" -- just as Keen tries to "understand the pitfalls of other industries." Keen and Jay Servidio are at odds over the continuation of his services.

Mainstream sides of the business are growing quickly, says Mr. Skoll, the board member. "I think Keen stepped into a situation where the markets that were most opportune for using this kind of system were things like 900 numbers," the eBay veteran says. But Keen management "really sees this as a platform for helping people exchange information for all sorts of things. And over time, they're not limiting themselves to romance and astrology."

Keen says its latest offering, providing technical support on Microsoft Office XP software, has been one of many recent hits. "With the right momentum, the right growth," Mr. Jacob said in February, "a company will break the IPO blockade. It would be great to be the company to do that."

Last Feb. 9th the Italian Environment Minister was questioned by a MP representing Italy's Radical Party about "closed" coffee-capsule systems: would they not deter consumers from changing brands? And: wouldn't they turn an otherwise "green" raw material into a pollutant?

Italian MP Elisabetta Zamparutti's tone while questioning Mrs. Prestigiacomo, the Italian Environment Minister, played on two underlying concepts described in similar tones in the "Nespresso" entry in the English-language version of Wikipedia (consulted on March 13th, 2010). One: the "ecological footprint" of a coffee prepared with capsules is far greater than "all other preparation" methods. Two: as Nespresso machines and capsules are linked to each other, the Nespresso model "is contrary to everything that is done for other types of coffee" - basically it's against the free market.  

Some people abide by these concepts. Hence it is obvious that somebody wanted to capitalize upon the "urge for sustainability" expressed by some segments of the coffee market. It is peculiar, though, that the first to do this is Jean-Paul Gaillard, Nespresso's leader until 1997. Those were the stormy days of Nespresso's cold-start in the world of single-portion systems, when Nespresso's "Club" was launched. The figures speak for themselves: on the first day three members joined, on the second day there were eleven of them, but on the third day: none. Today their non conventional distribution channel profiles customers with an accuracy unavailable to any competitor relying on traditional channels, and presents itself as a marketing case study on a par with Amazon or iTunes Store - as well as the perfect launching pad for any rocket Nestlè should wish to send into "food-for-status" space. 

Twenty years after those hard days, Nespresso's former boss is the first to announce a Nespresso-compatible capsule sold utilizing quite the opposite business model: distributed by supermarkets, leveraging on the installed-field of machines the Nespresso people have built during the past two decades. Patented by Gaillard's Ethical Coffee Company (ECC), these capsules boxes should finally "free the market" and offer a couple of advantages: they will cost less (20% less, they say) and will offer (being "biodegradable in 60 days") a sustainable solution, whatever that means.

To the tune of "I do not copy, I innovate", Gaillard announced that he had "seen a gap in the perforation system of the bottom of the [Nespresso] capsule" and after zigzagging around the "1500 patents" that constitute Nespresso's IP platform, he used this gap as the basis for ECC's 2008 patent that is in fact intended to improve "existing capsules". No names mentioned.

Starting from next May, the French retail chain Casino will distribute - thanks to an 18-month exclusive deal with ECC - the "green" Nespresso-clone. Casino was virtually an obligatory choice, as monsieur Gaillard explains, both "for the vision and the guts" of Casino's CEO and majority shareholder, M. Jean-Charles Naouri. Naouri is the man known to the French as the "Einstein of the supermarkets" and was - in 2009, according to the magazine Challenges - the 63rd richest man in France. 

The reference to M. Naouri's manly attributes is hardly surprising, since some considered that Nestlè's lawyers would probably line up to buy ECC/Casino capsules, as part of their vow to defend Nespresso's IP rights from unlawful attacks.  Gaillard, jokingly referring to himself as David (as opposed to Goliath, a.k.a. Nestlè), has indeed chosen a heavyweight to help him carry out his task: the 2nd largest retailer in France - with sales of 26.75 billion Euro and 1,849 million EBITDA, in 2009.

So: is this the ideal path towards a freer, environmentally friendlier world. Or not?

Well, on the subject of "free competition" let us follow the advice of the experts. For instance the President of one of the world's largest agro-industrial companies, Archer-Daniels-Midland (ADM). A forthright speaker and a generous bi-partisan political contributor, Dwayne Andreas stated in a 1995 interview, that "the only place where you see a free market is in the mouth of politicians". Indeed, although the term "perfect competition" would lead us to think that it represents the ideal market structure, empirical observation leads us to agree that companies naturally aim at attaining a monopoly. This is the perfect market structure from a seller's standpoint - for it's the provider (supply) who sets the prices. And this is a whole different ball-game from perfect competition, where it's the client (demand) who sets the prices.

Therefore it is difficult to switch from one mobile-phone operator to another, and my freely downloaded Opera browser prompts me to use it as the default choice. Similarly, in Italy, both coffee roasters and vending operators tend to free-loan coffee machines to restaurants and offices, so that they can create an exclusive relationship. Even Casino negotiated an exclusive deal with Galliard - and the ECC capsule is patented, so that (if ECC's patents stand on solid grounds) ECC's technical solution may be not used by other players. 

In brief, it is normal to surround your business with barbed wire: it is reasonable for companies to be allowed to recover R&D (and marketing) investments, so that other companies cannot piggy-back on a company's investments and - quite simply - start selling a compatible, less expensive (and/or more profitable) product. Also, machines using closed systems (see for instance PC printers) tend to be sold at attractive prices that often do not make it possible to fully recover the costs associated with launching a product on a national (or international) scale. The machine, indeed, is more of an investment than a cash-cow, even for coffee-roasters: only huge capsule volumes make for "big business", but huge volumes involve huge investments (especially when launching into the in-home coffee market). It is therefore to be expected that coffee players protect their systems - it would be rather risky not to.

As for the other main topic, the environmental impact of coffee-capsules, let me use a privileged observation point - the one I am writing from: flying at 24.000 feet above Lake Neuchatel. I am right on top of the new quadrangle of "international espresso", as defined by the four cornerstones of Avanches (the Nespresso production plant), Orbe (Nestec's R&D center), Friburg and Paudex (respectively the headquarters of ECC and Nespresso). If we drew a circle around those four small Swiss villages, within a radius of a mere 25 kilometres we would find (at least in terms of patents) more capsule technology and coffee inventors than in any other part of the world.

But I digress. Back in the plane the flight assistant is serving airline lunches in single-use containers and I am counting the objects destined to become garbage: the entire tray and its cover, a paper napkin, two spoons plus knife and fork and their packaging, two cups, the plastic "tablecloth", five single-portion containers (pepper, salt, sugar, butter and coffee whitener), the packaging of the chocolate chip biscuit, one container for the main course, including the lid (some people - as the food is of pretty average quality - don't even care to lift the lid and the crew throws the whole thing away). In total I have counted nineteen items ready for disposal: actually twenty, if you consider yourself a gourmet. 

Let me put this a different way: when we talk about the environment, we would do better not to mince our words. In 2010, our existence is swamped by environmental luxuries our world might not be able to sustain in the long run: cotton swabs and diapers and pocket paper tissues, pre-washed pre-cut pre-packaged salads, Kiwi and strawberries and lamb-chops from Lake Taupo flown across the globe, papayas and tangerines that land in our plates from Ecuador, Australian Wagyu beef steaks served on Engadin tables. In addition (half-empty, gas-guzzling) cars or public buses do not fit into the environmentally-friendly picture we would love to believe is a true portrait of our world. And should we dare to mention bio-fuels? Even Vancouver 2010, heralded as the "green Olympics", prompted environmentalists to hold massive demonstrations against the allegedly catastrophic eco-balance of the event. 

Talking of closed systems, take safety razors: they create a lot of waste plastic and metal, compared to good old fashioned cut-throats. And what about the printer cartridges in my office? Whenever one colour runs out, the outer box is so big it doesn't fit in the waste paper basket. I mean: I throw away almost two pounds of paper, plastic, ink and heaven knows what else - and that is per single colour. Made in Singapore, that cartridge will enjoy one or two months of glory in Milan and then it will be buried (or incinerated) in don't-ask-me-where.

All this waste is a great help to the general economic system - yet it remains what it is: unsustainable waste. Let's lay things on the line: our capitalistic way of life with its steadily growing consumption patterns is destined - in a short span of time, at least short in historical terms - to change into a conservation and selective model of consumption. But, while we wait for the old model to die, there is one thing that coffee capsules do, and help the coffee industry with it: to lead the concept of "drinking a good coffee" back to its sacred, ritual roots. Because coffee drinkers should not forget what coffee used to be: a pleasurable luxury, an intense ritual for our senses.

Yes. Use European-level labour costs throughout the value chain (and not - as it is often the case today - underpaid labour, at least by "first-world" standards) and coffee as a commodity would cost three or four times more than it does today. Judged from this perspective, coffee-capsules avoid wasting a precious commodity. A coffee-capsule raises to new heights a noble raw material that the 21st and 20th century have reduced to a banalised swill prone to free-refills. 

As my Dutch friends like to joke: "Since Senseo kicked in heavily, soft-pads have seriously affected the consumption of Holland's biggest coffee drinker". And who might this be? "The sink". Yes: single-portions have drastically reduced the amount of stale coffee gurgling down sinks in the bathrooms of homes or convenience stores. The same applies in Italy and the Latin countries, where coffee consumption uses different paraphernalia but wastage is again a problem - happily curbed by coffee-capsules.

Moreover: a capsule-machine is more energy-efficient than a traditional coffee machine, where high wattage and repeated brewing cycles are required to reach that thermal balance needed to brew a perfect cup. Also let me mention what would be the end result of replacing the millions of capsule-machines installed in Europe and elsewhere with fully-automatic coffee-machines - which means changing from a simple water-heater to a complex unit full of mechanisms and (because of them) very prone to technical break downs. This would mean beefing up the technical staff, as well as increased transportation costs and related environmental costs: the bottom line being a more expensive cup of coffee. 

On top of all this (and now I am thinking about Kimbo's MaxEx or Illy's Iper-Espresso), capsules - to date - guarantee an additional bonus: great brewing technology.

So it's easier to take pot shots at the economic and environmental cost of coffee-capsules than it is to draw informed conclusions. M. Gaillard's capsule has "opened" the world of Nespresso to competition by drawing up an exclusive contract with Casino, patenting around its features and offering "a capsule biodegradable in 60 days" - even though I have never heard of a fully environment-friendly, oxygen-impermeable, economically-sustainable packaging material. 

One thing is for sure: the ECC/Casino capsule will cost less because - as Gaillard explains - the business model hinges on 9000 stores promoting and selling (at their cost and at once) a product that took almost 25 years (and a lot of effort) for Nespresso to introduce to the world. What a sharp idea. 

This is probably the reason why the Belgian economic magazine Trends-Tendances wondered whether the move might not have been piloted by Nestlè. Their idea? ECC is a smoke-screen created not so much to hurt Nespresso but to penetrate Senseo's market: Douwe Egberts' system selling their soft pads at between 16 and 39 eurocents per cup, mainly in Benelux and France. 

Such a scenario would be enticing for anybody who has invested in Nestle's shares: a) the biodegradable arena fenced off by patents (at least to a certain extent); b) ECC's Troy horse opening a pathway to supermarkets for Nespresso-compatible coffee, and c) definitely (and literally) the first cartridge shot against Sara Lee - the one company (with Nestlè and perhaps Kraft) able to impose a single-portion format on European retail chains. All the above d) right in the heart of Nespresso's stronghold, France, and e) leaving Nespresso's brand-clout intact - distributing its "exclusive" capsules to the "privileged few" (simply a manner of speaking).

Monsieur Gaillard's upbeat tone would lead us to believe that Nestlé is not behind this one. For sure we know Douwe Egberts/Sara Lee are not caught asleep at the wheel: indeed, hardly a month after Gaillard's public announcement, the American-Dutch conglomerate (whose food and beverage division alone declared sales of 3 billion USD in 2009) has announced it will market a Nespresso-compatible capsule with its high-profile brand, "l'Or".

The move is ripe with symbolism: a few days after Easter 2010, Sara Lee will launch its effort to resurrect customers who fell prey to the darkness and "slavery" of the Nespresso club. That is roughly one month before the Casino/ECC launch. And using one of Gaillard's refrains (environmental and economical sustainability) - in Sara Lee's case guaranteed by the Utz certification.

Last but not least, this story brings some good news for Italy, after Nespresso had proudly stated it had surpassed Lavazza's machine sales "in the cradle of espresso" - the Italian market. Indeed, as the specialized press has reported, one of ECC's private equity funds appears to be Alessandro Benetton's. 

So: the tournament is not over yet. We know, instead, that its start is set for next May. And it will not be a tournament for pushovers.

8 Tips to Hiking Etiquette and Safety

Anytime the weather is good is a great time to enjoy day hikes. I love hiking

and wish I could do more. For years my husband and I have taken annual

camping trips that include daily hikes.

Hikes are a great way to relax and enjoy a little solitude or to share time

with loved ones, family, and friends as a group activity. It's a perfect way

to expose kids to the beauty of nature outside city life. It can also be a

fine business activity. A few years back a potential client invited me to

join her for a morning hike, instead of a morning coffee meeting.

Wherever you hike, you will invariably encounter other people who are also

enjoying the same activity. If you abide by these few simple courtesies, your

hikes will be pleasant, safe, and stress-free.

1. Hiking pace. Don't try to hike at your partner's pace. If your speeds

don't match and you are on a well-defined clear trail, try splitting up for a

while. Meet up at predetermined points along the way. This way you can hike

at your own speed and enjoy the special solitude of hiking alone; and

probably see more wildlife in the process.

2. Hiking with kids: As soon as children can walk well by themselves (around

age 4 or 5 and certainly by 6 years old), head out on a short day hike to get

a feel for your child's pace, level of interest, and endurance. You will also

test your own patience and tolerance, not to mention your ability to carry

your kid back to the car when that last half-mile is just a little too far.

Younger kids are much less likely to continue and not complain when the going

gets tough. Some kids don't see the point of suffering like most adults who

are too embarrassed to complain. When many kids get tired, hot, wet, or

miserable, they simply stop walking.

3. Enjoy the peace and quiet. Leave your electronic devices (phones, radios

and music devices) at home. If you want to listen to something, listen to the

sounds of the wilderness. Resist the temptation to catch up on your phone

calls.

Be sensitive to how much noise you make, especially in a group. When you're

outside, sound carries much more than you think. Keep your voice down and

don't make unnecessary noise. Act as though you are in a library or watching

a performance in a theatre.

And there's so much to hear. While there is a distinct lack of city noise

such as traffic, honking horns, telephones, buzzers, beepers, car alarms, and

(I hope) blaring music, there is no shortage of sound. Sounds of wind, water,

birds, and other animals all add to the "music" of the wild. This is the most

common reason people go into the woods, to enjoy the sounds of nature and the

relative silence that ensues.

4. Stick to pre-arranged plans. If you are hiking with a partner or a group,

don't go off alone without telling someone what you are doing and when you

intend to rejoin the group. If you agreed to hike, picnic, or camp in a

certain location, don't make a spur-of-the-moment decision to go off on your

own. Your group could get worried or even frantic if you disappear. They

could even get hurt or worse if they go looking for you in unfamiliar

territory or in the dark.

5. Stay on the trail. Hike on existing trails. They are designed for the high

impact of many hikers. Walk single-file so as not to widen it. Wear hiking

boots so you can keep on the trail through wet or muddy stretches. Skirting

puddles creates additional side trails and unnecessary erosion. Don't

shortcut the switchbacks. They are designed to minimize erosion and ease the

ascent and decent in steep sections of the trail. Cutting these corners

causes downhill drainage that can quickly erode a trail. When taking a rest

break, move off the trail to a hard, rocky area, a non-vegetated place, or a

place with durable vegetation, such as dry grass.

6. Share the trail. You have a pace that is natural and comfortable. If

people behind you catch up, step aside---typically to the right---and let

them pass. While this may seem obvious, you'd be surprised how many hikers

choose to speed up instead. The problem is that slower hikers usually can't

maintain the faster pace and must slow down eventually, so faster hikers

catch up anyway. Repeating this becomes uncomfortable for everyone, so don't

do it.

7. If you pack it in, pack it out. Whatever you bring with you, even on a day

hike in a local park, take it out or dispose of it in a trash or recycling

container provided by the park. Some trash items, such as batteries, are

considered toxic waste and must be disposed of properly, not tossed with the

regular trash.

8. Respect the environment and wildlife. Don't alter the environment to your

liking or bring home souvenirs. Allow the next person to see as much of the

natural world as you did. It's exciting to find an arrowhead or deer skull by

the trail. Why not leave it there so the next hiker can enjoy the same

excitement as you did?

You are in the home of wild animals and birds, so respect their need for

undisturbed territory. Disturbing animals can interfere with feeding or

breeding behavior. When following an animal for a photo, stay downwind, avoid

sudden motions, and don't charge or give chase. Resist the temptation to feed

them. Leaving seeds for birds or breadcrumbs or nuts for squirrels can upset

the natural balance of their food chain. Feeding wild animals can make them

dependent on human food, which causes big problems, like bears in some areas

ripping the doors off cars to get to the people-food inside.

BONUS: Protect yourself from lightning:

If a thunderstorm comes upon you while hiking, your instinctive response

might be to take cover and get into shelter. But sometimes shelter can be

more dangerous than staying outside. Find a place least likely to attract a

strike. Stay away from peaks or tops of hills, exposed ridges, tall trees,

and open fields.

Probably the safest shelter is inside the "safety shadow" of a potential

lighting target. This means you're far enough away that you are relatively

safe from a direct strike and ground currents, but not so far away as to be a

target. If you are near a large tree or other target, stay inside an area

where the horizontal distance from the target is about one-half the tree's

height above you. It is best if the tree is 5 to 10 times your height so you

place yourself a reasonable distance from the potential strike zone.

Wherever you place yourself, put a non-conducting item between you and the

ground by crouching on top of your pack or knapsack, a rolled up jacket, or a

dry rock. Assume the "lightning position" with your feet close together and

your buttocks off the ground. Hug your knees or put your hands on them.

Food safety is all about handling, preparing and storing food in a way that will prevent any food-borne disease. Besides transmitting disease from person to person, food can also serve as a growth medium for harmful bacteria like E.Coli which can eventually lead to food poisoning. From causing diseases such as diarrhea to life-taking ones like cancer, unsafe food can be hazardous to mankind. If one does not pay much heed to food safety, it can also result in fever, abdominal cramps, nausea, vomiting and dehydration. WHO estimates that food-borne and water-borne diarrhea alone results 2.2 million deaths annually, 1.9 million of them being children. Food-borne diseases and threat to food safety is a growing public health problem and an important cause of reduced economic productivity that needs to be tackled effectively. Food safety precautions should be maintained at every stage, right from selecting food in the grocery store to storing the food appropriately. Here are few food safety facts you must keep in mind to keep yourself and your family in good health.

Food Safety Facts

• Buying the right food is very important. Always check the expiry date of every product that you buy, especially when you buy packaged meat, poultry or fish. Even if the expiration date is acceptable, do not buy meat or fish which looks or smells strange. Do not buy pre-stuffed fresh turkey or chicken.
• Always put refrigerated or frozen items in your shopping cart at the end, just before you are about to head towards the check-out counter.
• Fruits with broken skin should never be bought, since bacteria can enter the fruit through the opening and contaminate the entire fruit. Even non pasteurized ciders or juices can contain harmful bacteria.
• Wash your hands, cutting board, dishes and other utensils with soap and preferably hot water, both before and after preparing food.
• Do not cross contaminate. Always remember to keep raw meat, poultry, fish and other juices away from other food. After cutting raw meat, wash your hands, cutting board, knife and the counter top with hot soapy water.
• Even while marinating meat or poultry in the refrigerator, always remember to cover the container.
• To minimize hazards caused due to pesticide residues, throw away the outer leaves of leafy vegetables such as cabbage or lettuce. Also peel and cook wherever possible.
• Wash fruits and vegetables thoroughly under clean running water before use. This is vital to remove any dirt that might be on the outer skin. This would reduce any form of bacterial contamination to the inner flesh. However, do not wash fruits or vegetables with detergent.
• Do not leave soiled or damp wash clothes on your kitchen counter. Bacteria can easily grow on them, hence spreading infection.
• Try and use plastic or non-porous cutting board. Porous surfaces like wood can cause bacteria to seep into the surface and contaminate any food that comes in contact with it.
• While cooking meat, certain temperatures need to be adhered to. Ground meat should be cooked to 160o F, ground poultry to 165o F, beef, lamb steaks, roasts and chops to 145o F and fresh pork 160o F.
• Never leave cooked food out for over 2 hours or 1 hour if the temperature is above 90o F. Bacteria causing food-borne diseases rapidly grow in room temperature.
• Remember to keep hot food hot and cold food cold. Cold food should be kept in ice or refrigerated until ready to be served. Even food meant to be served hot should be heated first.
• Divide the leftover food in shallow containers to aid rapid cooling. Put the food directly into the refrigerator or freezer and use it within 4 days.

How to Start your Own Baby Food Business Part #5: Fresh, Organic, and Local

Of course, you don't have to make fresh, organic, and local underlining values of your baby food business. Perhaps these attributes are not as important to parents in your area. However, as I have already shown you, the market for products that have these qualities is growing rapidly. And the fact that your baby food is fresh, organic, and local is unlikely to turn people off. But you may loose potential customers if your food doesn't have at least one of these attributes.

Why Organic Foods For Babies?

-Existing regulations on the amount of pesticide residues that non-organic foods may contain are based on 'acceptable' levels for adult consumption. Babies and young children are at greater risk because the immaturity of their body systems makes them more vulnerable to toxins.

-Because children's diet is often restricted to just a few types of less processed food- like apples, potatoes, carrots ' they may receive higher exposure to toxins.

-From conception until one year of age, children are at their most vulnerable. During this critical stage of development cells are multiplying at their peak, yet the body has limited diet to draw upon.

-A baby's digestive system is also more efficient that that of an adult at absorbing foods, enabling nutrients to be used more quickly, but also making the body more vulnerable to toxins. Immature kidneys are not as proficient at excreting harmful substances, so they may circulate in the body for a longer period of time.

-No one knows what effect genetic engineering may have on food products and the health of those who consume them. So the best way to protect yourself and your baby from possible problems is to choose organic. Organic baby foods are produced without genetically modified ingredients.

Why Local Foods For Babies?

-Eating local means more for the local economy. According to a study by the New Economics Foundation in London, a dollar spent locally generates twice as much income for the local economy. When businesses are not owned locally, money leaves the community at every transaction.

-Locally grown produce is fresher. While produce that is purchased in the supermarket or a big-box store has been in transit or cold-stored for days or weeks, produce that you purchase at your local farmer's market has often been picked within 24 hours of your purchase. This freshness not only affects the taste of your food, but the nutritional value which declines with time.

-Locally grown fruits and vegetables have longer to ripen. Because the produce will be handled less, locally grown fruit does not have to be "rugged" or to stand up to the rigors of shipping. This means that you are going to be getting peaches so ripe that they fall apart as you eat them, figs that would have been smashed to bits if they were sold using traditional methods and melons that were allowed to ripen until the last possible minute on the vine.

-Eating local is better for air quality and pollution than eating organic. In a March 2005 study by the journal Food Policy, it was found that the miles that organic food often travels to our plate creates environmental damage that outweighs the benefit of buying organic.

-Eating local protects us from bio-terrorism. Food with less distance to travel from farm to plate has less susceptibility to harmful contamination.

-Supporting local providers supports responsible land development. When you buy local, you give those with local open space - farms and pastures - an economic reason to stay open and undeveloped.
